Put away your soil! Because you won’t need much of it to start (or propagate) growing these herbs and vegetables. These grow in water instead!
#1 Peppermint: While peppermint will eventually need to be moved to soil, you can propagate peppermint in water from leaf cuttings. 17 Apart has a great tutorial for beginner gardeners.
#2 Spearmint: Because it’s closely related to Peppermint (it’s actually a cross between peppermint and aquatic mint) Spearmint is another herb that can be started in water. HomeGuides has more.
#3 Bamboo: I know, I know Bamboo is a plant, not a vegetable! But it’s know for it’s ability to grow in pebbles and water. Learn how to take care of your Lucky Bamboo plant over at The Spruce.
#4 Lemon Balm: Take lemon balm cuttings and place them in a container of water in a warm area that gets tons of sunlight. You will need to change out the water regularly, and the process could take as long as 4 weeks! More from 17 Apart. Add lemon balm to your herbs and vegetable garden!
#5 Stevia: You’ve probably seen powdered Stevia on the shelf at the grocery store. It’s a great all-natural sweetener! Place a few soft-growing branches into warm water. Bright light is neededed when you add this to your herbs and vegetable garden.
#6 Thyme: Thyme is known for drying out extremely fast, so you will need to place your cuttings in water as soon as they’ve been cut. Learn more about re-growing Thyme here! Thyme is one of the most delicious herbs and vegetables!
#7 Tarragon: Tarragon is one of my favorite herbs, I love to put it in virtually any dish I cook! Trim your Terragon in early spring and place the cuttings in water. Like all propagation, you will need to put your cuttings in a warm window with lots of sun. New growth should appear in a few months.
#8 Basil: Basil loves to grow and thrive in water! Take basil cuttings before your basil begins to flower. It loves warm areas!
#9 Lettuce: Cut off the bottom of your lettuce head, place it in a small bowl of water. You’ll begin to notice growth in 3 days, and you should have a completely new head of lettuce in only a few weeks time!
#10 Avocado: Save your avocado pits! You can grow a completely new plant from them! The process is a little bit more complicated, but HGTV breaks it down for anyone with a black thumb! Add an avocado to your herbs and vegetable garden for tasty guac all year long!
#11 Celery: Cut off the bottom few inches of your celery stalks, and place these in a bowl of water. You’ll begin to notice a new celery stalk growing in only 3 days time! This is one of my favorite herbs and vegetables to eat!
#12 Fennel: Similar to celery, cut off the bottom inch of your fennel plant. Keep the roots intact, and place the cuttings in a bit of water.
