Try growing arugula this fall! It actually doesn’t do well in extreme heat or extreme cold, so fall is the best season for it.
Lettuce is usually great to grow at any time of the year, but it’s especially nice during the fall. The temperature gives it a nice cold crispiness. Plant it 4-8 weeks before the first frost for the best fall vegetable gardening.
Mustard greens grow really fast, so they’re nice for a last minute garden or fall garden. Plant about 3 to 6 weeks before the first frost, and make sure they have rich, moist soil for best growth.
Kale not only has a great color (it’s wonderful for gardening containers), but it grows well in the fall! Plant six to eight weeks before the first frost and see it bloom!
In some zones, you can grow collards even through the whole winter. Their flavor actually gets better after a frost, which is nice for colder areas.

Start cauliflower indoors about 12 weeks before the first frost. After six to eight weeks, go ahead and put them in the garden. You’ll want to make sure they get about 6 hours of sun a day, though, so just be aware.
If you love Brussel sprouts, then you’re in luck. They survive really well in cold temperatures; so definitely plant them this fall. In fact, the frost improves their flavor!
Plant some spinach, and you could enjoy it all fall and winter. If you just pick the outside leaves off, then it will continue to grow. Plant it about 4 to 8 weeks before the first frost.

With a thick mulch, you can prolong the life of the turnips and make it easier to harvest. Other root veggies to grow during the fall are carrots! They are amazing at withstanding hard freezes, which makes them great for fall vegetable gardening.
